Safety
The blades are very sharp. Always cut away from your body and keep your fingers behind the edge.
Cut on a stable surface or a cutting board.
Check that the blades and handles are intact before each use.
Carry and store the knives in the case.
Keep out of reach of children. Recommended for ages 18 and over.
Improper use may cause serious cuts.
Using the knives
Gut hook: opens the belly with the hook without puncturing the innards.
Butcher knife: skins and breaks down the carcass. The curved blade follows the shape of the carcass.
Boning knife: cuts around bones and joints.
Let the edge do the work with long, calm strokes instead of pressing hard.
Honing the edge
The sharpening steel realigns the edge between sharpenings. Place the edge against the steel at about a 20-degree angle and draw the knife towards you, alternating sides for each stroke. When the steel no longer helps, the knife needs sharpening with a whetstone. The steel is 56-58 HRC.
Cleaning, storage and hygiene
Hand wash in warm water right after use. Do not put it in the dishwasher.
Dry the knives and the sharpening steel immediately. The steel is carbon steel and rusts if stored damp.
Do not use abrasives, bleach or steel wool.
Wash before first use and clean thoroughly after contact with raw meat.
Store dry and in the case. Wipe the case with a damp cloth and let it air dry.
The knife blades are intended for food contact and comply with Regulation (EC) No 1935/2004.
